Cheryl's Chicken Crockpot Recipe

We've discovered a few ways to save space in our small RV "frig".

When we fix a crockpot meal like the one below, we put the leftovers in a quart or gallon bag and put in the freezer for an easy TV dinner!

Here's a crockpot meal I did this week with chicken breasts:

2 skinned chicken breasts
1 can cream mushroom soup
1 can cream of chicken soup (or celery)s
8-10 baby carrots
1/2 cup skim milk (or whole if you prefer-we are trying to save on the fat!)
Italian seasonsed bread crumbs
Canadian steak Seasoning
1 TB fennel seed
1 tsp garlic salt
liberally season with pepper
(soups are salty so I tend not to add extra salt)

I put a little bit of olive oil on the bottom of the crock pot. Lay the two chicken breasts on top and season with Canadian Steak Seasoning and some pepper. Add baby carrots (sometimes I add 2 stalks of chopped celery - depends on what I have on hand)

Blend the two soup cans with the milk, fennel seed and garlic salt.

Slow cook for 4-6 hours. I usually start mine mid morning for dinner - works like a charm :)

We serve this over either rice, baked potato or noodles.

I bought a $7 package of chicken breasts - got 3 meals out of it using 2 breasts each - so this is a very inexpensive tasty meal that doesn't take much time to prepare!
