Long time on the road

We have put on some serious miles since my last blog entry.

900 miles in 2 days from Dallas TX after visiting family and now here we are on Mother's Day at a rest stop in LaGrande Oregon!

Words cannot express what a wonderful trip this has been so far. I hesitate to take a nap because I don't want to miss a thing!

The views along the way have been incredible. Everything from lots of traffic and million dollar homes in McKinney TX, prairies in OK, and mountains in Wyoming, UT and Oregon. All I can say is - what a beautiful country God has blessed us with!

We narrowly escaped some tornadoes and floods in TX before heading north through OK and Kansas.

As we approached Denver the mountains started showing snow at the upper elevations and the temps started dropping - right where I like them!! ha ha - Poor Perry. He keeps looking for long johns!

We spent the last 4 nights in one of our RPI Resorts at Camping World, Mineral Springs in Garland UT. We had a 360 degree view of the mountains as we lounged in the mineral springs spas. 90 degree pool - 104 degrees in the hot tub. We were in heaven!

Spent one day sightseeing and found Bear Lake - it was like being in the Virgin Islands in 30 degree weather ! the lake was crystal clear-aquamarine-blue-green-so beautiful it is hard to describe. I'll post a picture soon - so stay posted!

We called the kids today to say happy Mothers Day and it was Avery's confirmation. They say she wore a beautiful white dress and bonnet - can't wait for the pictures. Connor told his dad he wants to baptized in water - God is Good!!

Well - that's about it for tonite - just set the oven at 350 for the casserole Perry made yesterday.

Perry's On the Road Goulash:

Macaroni
Hamburg and onion
Stewed tomatoes and Rotel
Hot pepper flakes
2 layers in casserole dish of his goulash--then
Add another layer of cheese

Bake 45 minutes...an easy delicious meal for campers and non-campers alike!
